For the Crust:
- 2 cups mashed sweet potatoes
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup chopped pecans
- 1/4 cup honey
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, mix mashed sweet potatoes, granulated sugar, brown sugar, oil, eggs, and vanilla until well combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
- Pour the batter into the prepared cake pan and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- While the cake is baking, warm the honey slightly for easier drizzling.
- Once the cake is done, remove from oven and immediately drizzle with honey and sprinkle with chopped pecans.
- Allow the cake to cool for 10 minutes before serving.
