For the Crust:

  • 2 cups mashed sweet potatoes
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chopped pecans
  • 1/4 cup honey

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, mix mashed sweet potatoes, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until well combined.
  3. In a separate bowl, whisk together flour, cinnamon, nutmeg, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the sweet potato mixture, stirring until just combined.
  5. Pour the batter into the prepared cake pan and bake for 30 minutes, or until a toothpick inserted comes out clean.
  6. While the cake is still warm, drizzle honey over the top and sprinkle with chopped pecans.
  7. Allow the cake to cool slightly before serving.
