Sweet Potato Cheesecake Pie

A creamy and decadent sweet potato cheesecake pie with a spiced graham cracker crust.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, melted
  • 1 1/2 cups mashed sweet potatoes
  • 16 oz cream cheese, softened
  • 3/4 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, cinnamon, and melted butter in a bowl. Press into a 9-inch pie dish and bake for 8 minutes. Let cool.
  3. Beat cream cheese and brown sugar until smooth. Add eggs one at a time, then mix in sweet potatoes, vanilla, nutmeg, ginger, and salt.
  4. Pour filling into the crust and bake for 40-45 minutes until set. Let cool completely before serving.
