Sweet Potato Brownies

Rich, fudgy brownies made with nutrient-packed sweet potatoes for a healthier twist on a classic dessert.

  • 1 cup mashed sweet potato
  • 1/2 cup almond butter
  • 1/3 cup maple syrup
  • 1/4 cup cocoa powder
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a large bowl, mix mashed sweet potato, almond butter, maple syrup, and vanilla until smooth.
  3. Add cocoa powder, baking soda, and salt, stirring until well combined. Fold in chocolate chips.
  4. Spread batter evenly into the prepared pan and bake for 25-30 minutes, until a toothpick comes out clean.
  5. Allow to cool completely before slicing into squares.
