Swedish Apple Cake

For the Crust:

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1/2 cup milk
  • 2 medium apples, peeled and diced
  • 1 tbsp powdered sugar (for dusting)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, beat eggs, then mix in melted butter and milk.
  4. Combine wet ingredients with dry ingredients, stirring until just mixed.
  5. Fold in diced apples and pour batter into the prepared pan.
  6. Bake for 30 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool slightly, then dust with powdered sugar before serving.
