Super easy Pear Almond Cake

This super easy Pear Almond Cake is light, moist, and packed with juicy pears and almond flavor. Ready in under an hour with minimal prep.

  • 4 large eggs
  • ¾ cup granulated sugar (144 g)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 2 ½ cups almond flour (280 g, packed)
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • 4 oz unsalted butter (room temperature, 113 g)
  • 2 medium pears (cored & sliced)
  • 12 tablespoons sliced almonds (for topping, optional)

Instructions

  1. Preheat the oven to 350°F. Butter and line an 8” round cake pan with two long strips of parchment paper in a cross pattern and one piece of round parchment paper on the bottom.
  2. In a medium mixing bowl, whisk together almond flour, salt, and baking powder until evenly distributed. In a large bowl, beat butter and sugar until pale and fluffy, then add eggs one at a time, followed by vanilla and almond extracts.
  3. Add the almond flour mixture to the wet ingredients and mix until smooth. Pour batter into the prepared pan, press sliced pears halfway into the batter, and sprinkle with sliced almonds.
  4. Bake for 55–60 minutes until the center is set and a toothpick inserted comes out clean. Tent with foil after 45 minutes if the top browns too quickly. Cool before serving.

Notes

You don’t need to peel the pears, but peeling prevents browning for a prettier look. Use ripe but firm pears for best texture. Store leftovers in an airtight container for up to 3 days.
