For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 4 cups fresh peaches, sliced
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tbsp lemon juice
- 1/2 cup all-purpose flour
- 1/4 cup cold butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs and melted butter, press into a 9-inch springform pan to form the crust.
- Beat cream cheese and granulated sugar until smooth. Add eggs one at a time, then stir in vanilla. Pour over crust.
- In a bowl, toss peaches with brown sugar, cinnamon, nutmeg, and lemon juice. Spread evenly over cheesecake batter.
- Combine flour and cold butter until crumbly. Sprinkle over peaches.
- Bake for 50-60 minutes until set. Cool completely before serving.
