Strawberry Crunch Cheesecake

A creamy cheesecake with a strawberry swirl and golden crumble topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup strawberry preserves
  • 1 cup crushed golden cookies
  • 2 tbsp melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and 1/2 cup melted butter. Press into a 9-inch springform pan.
  2. Beat cream cheese, sour cream, and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla.
  3. Pour filling over crust. Drop spoonfuls of strawberry preserves on top and swirl with a knife.
  4. Bake for 45-50 minutes until center is set. Cool completely.
  5. Mix crushed cookies with 2 tbsp melted butter. Sprinkle over cooled cheesecake before serving.

Notes
