For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 16 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 2 large eggs
- 1 cup fresh strawberries, diced
- 1 cup golden Oreos, crushed
- 1/4 cup freeze-dried strawberries, crushed
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Line a mini muffin tin with paper liners.
- Mix graham cracker crumbs with melted butter. Press 1 tsp into each liner to form crusts.
- Beat cream cheese, sugar, and vanilla until smooth. Add sour cream, then eggs one at a time.
- Fold in diced strawberries. Spoon filling over crusts.
- Bake for 18-20 minutes until set. Cool completely.
- Combine crushed Oreos and freeze-dried strawberries. Sprinkle over cheesecake bites before serving.
