Strawberry Crunch Cheesecake Bites

Delicious bite-sized cheesecake treats with a strawberry crunch topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 cup fresh strawberries, diced
  • 1 cup golden Oreos, crushed
  • 1/4 cup freeze-dried strawberries, crushed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F. Line a mini muffin tin with paper liners.
  2. Mix graham cracker crumbs with melted butter. Press 1 tsp into each liner to form crusts.
  3. Beat cream cheese, sugar, and vanilla until smooth. Add sour cream, then eggs one at a time.
  4. Fold in diced strawberries. Spoon filling over crusts.
  5. Bake for 18-20 minutes until set. Cool completely.
  6. Combine crushed Oreos and freeze-dried strawberries. Sprinkle over cheesecake bites before serving.
