Strawberry Cheesecake Stuffed French Toast

Thick slices of brioche bread stuffed with a creamy cheesecake filling mixed with fresh strawberries, dipped in a rich custard batter, and cooked until golden brown. A decadent breakfast treat perfect for special occasions or weekend brunch.

  • 8 ounces cream cheese, softened
  • 2 tablespoons honey
  • 1/2 cup fresh strawberries, diced
  • 12 slices brioche bread (1 loaf)
  • 4 large eggs
  • 1 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • Maple syrup for serving
  • Whipped cream for serving
  • Powdered sugar for serving

Instructions

  1. Allow cream cheese to soften at room temperature for about an hour before starting.
  2. In a medium bowl, combine softened cream cheese with honey and stir until well combined.
  3. Fold the diced strawberries into the cream cheese mixture.
  4. In a large shallow bowl, whisk together eggs, milk, vanilla extract, cinnamon, and salt.
  5. Spread the strawberry cream cheese filling onto 6 slices of brioche bread.
  6. Top with the remaining 6 slices of bread to create sandwiches.
  7. Heat butter over medium heat in a skillet or griddle.
  8. Dip each stuffed bread sandwich into the egg mixture, coating both sides well and allowing 5 seconds on each side to absorb.
  9. Place the coated French toast on the hot skillet.
  10. Cook for 3-4 minutes on each side until golden brown and cooked through.
  11. Serve warm topped with maple syrup, fresh strawberries, whipped cream, and powdered sugar.

Notes

Do not leave the bread slices in the egg mixture too long or they will become soggy. Cut the brioche into thick slices to make stuffing easier and prevent the filling from leaking out during cooking. This recipe is perfect for Valentine’s Day brunch or special weekend breakfast occasions.
