Delicious no-bake strawberry cheesecake bites with a creamy strawberry-flavored cream cheese center coated in a crunchy mixture of graham crackers, freeze-dried strawberries, and sugar.

  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup strawberry puree (fresh or frozen blended)
  • 1 cup crushed graham crackers (for filling)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 cup freeze-dried strawberries, crushed
  • 1 cup crushed graham crackers (for coating)
  • 1 cup strawberry glaze (optional, for dipping)

Instructions

  1. Beat softened cream cheese in a bowl until smooth. Add powdered sugar and vanilla extract and mix until well combined.
  2. Mix in strawberry puree until evenly blended and light pink.
  3. Stir in 1 cup of crushed graham crackers until the mixture thickens.
  4. Scoop and roll the mixture into small balls. Place on a parchment-lined tray and chill for 1 hour (or freeze for 30 minutes).
  5. In a separate bowl, mix remaining crushed graham crackers, crushed freeze-dried strawberries, and granulated sugar. Stir in melted butter to form a crumbly mixture.
  6. Roll chilled bites in the crunch coating until fully covered.
  7. Serve immediately or chill until ready. Optionally, dip in strawberry glaze before serving.

Notes

Chilling the bites helps them firm up for easier coating and handling. Using freeze-dried strawberries in the coating adds a vibrant strawberry crunch without moisture. Optionally, dipping in strawberry glaze adds extra sweetness and shine.
