Delicious bite-sized treats combining creamy cheesecake, fresh strawberries, and a crunchy graham cracker crust.

For the Crust:

  • 1 cup graham cracker crumbs
  • 3 tbsp melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup diced fresh strawberries
  • 1/2 cup whipped cream
  • 1 tbsp granulated sugar (optional)

Instructions

1. Prepare the Crust:

  1. In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into mini muffin tins to form small crusts.
  2. In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
  3. Spoon the cream cheese mixture over the crusts. Top with diced strawberries and a sprinkle of granulated sugar if desired. Chill for at least 30 minutes before serving.
