For the Crust:
- 1 cup graham cracker crumbs
- 3 tbsp melted butter
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup diced fresh strawberries
- 1/2 cup whipped cream
- 1 tbsp granulated sugar (optional)
Instructions
1. Prepare the Crust:
- In a bowl, mix graham cracker crumbs and melted butter until well combined. Press into mini muffin tins to form a crust.
- In another bowl, beat cream cheese, powdered sugar, and vanilla until smooth. Fold in diced strawberries.
- Spoon the cream cheese mixture over the crusts. Chill for at least 30 minutes.
- Top with whipped cream and a sprinkle of granulated sugar if desired before serving.
