Strawberry Cheesecake Crunch Bites

Delicious bite-sized treats with a graham cracker crust, creamy cheesecake filling, and fresh strawberry topping.

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream
  • 1 cup fresh strawberries, diced
  • 1 tbsp granulated sugar

Instructions

1. Prepare the Crust:

  1. Mix graham cracker crumbs with melted butter and press into mini muffin tins to form crusts.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip heavy cream to stiff peaks and fold into cream cheese mixture.
  4. Spoon filling into crusts and chill for 2 hours.
  5. Toss strawberries with granulated sugar and let sit for 15 minutes.
  6. Top each cheesecake bite with strawberry mixture before serving.
