For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 8 oz cream cheese, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/2 cup heavy cream
- 1 cup fresh strawberries, diced
- 1 tbsp granulated sugar
Instructions
1. Prepare the Crust:
- Mix graham cracker crumbs with melted butter and press into mini muffin tins to form crusts.
- Beat cream cheese, powdered sugar, and vanilla until smooth.
- Whip heavy cream to stiff peaks and fold into cream cheese mixture.
- Spoon filling into crusts and chill for 2 hours.
- Toss strawberries with granulated sugar and let sit for 15 minutes.
- Top each cheesecake bite with strawberry mixture before serving.
