For the Crust:
- 1 lb flank steak, pounded thin
- 1/4 cup cream cheese, softened
- 1/4 cup chopped spinach, drained
- 1/4 cup sun-dried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Lay the pounded flank steak flat on a cutting board. Season both sides with salt and pepper.
- Spread the softened cream cheese evenly over the steak, leaving a small border around the edges.
- Sprinkle chopped spinach, sun-dried tomatoes, minced garlic, and Italian seasoning over the cream cheese.
- Roll the steak tightly from one end to the other, securing with toothpicks or kitchen twine every inch.
- Heat olive oil in a skillet over medium-high heat. Sear the rolled steak on all sides until browned, about 2-3 minutes per side.
- Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Remove from oven, let rest for 5 minutes, then slice into 1-inch pinwheels before serving.
