ONE-POT Spicy Italian Sausage Tortellini Soup with Spinach and Sweet Potatoes

  • 12 oz spicy Italian sausage, crumbled
  • 1 tablespoon olive oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon paprika
  • 1 large sweet potato, peeled and cubed
  • 5 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • 1 tablespoon tomato paste
  • 6 cups water or chicken broth
  • 8 oz refrigerated three-cheese tortellini
  • 4 oz fresh spinach
  • ½ cup heavy cream
  • 4 tablespoons fresh thyme or Italian seasoning for garnish

Instructions

  1. Heat olive oil in a large high-sided pot over medium heat. Add crumbled spicy Italian sausage and cook, stirring until browned and cooked through, about 5-7 minutes. Drain excess grease if needed. Sprinkle with 1 tablespoon Italian seasoning and 1 teaspoon paprika.
  2. Add peeled and cubed sweet potato, minced garlic, red pepper flakes, and tomato paste. Stir for 1-2 minutes until fragrant.
  3. Pour in 6 cups water or chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until sweet potatoes are tender.
  4. Add tortellini and cook according to package instructions, about 3-5 minutes until tender.
  5. Stir in fresh spinach and heavy cream. Cook 1-2 minutes until spinach wilts. Garnish with fresh thyme. Serve hot.

Notes

For extra spice, increase red pepper flakes. Substitute carrots or yams for sweet potatoes if preferred. Tortellini cooks quickly, so add at the end to avoid overcooking. Freezes well for up to 3 months.
