Spiced Carrot Cake (No Sugar, No Gluten)

This soft, spiced carrot cake is made with almond and coconut flour—no sugar, no gluten, and 100% flavor!

For the Crust:

  • 2 cups almond flour
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 3 large eggs
  • 1/4 cup melted coconut oil
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 2 cups grated carrots
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch cake pan.
  2. In a bowl, mix almond flour, coconut flour, baking soda, cinnamon, nutmeg, and cloves.
  3. In another bowl, whisk eggs, coconut oil, applesauce, and vanilla extract.
  4. Combine wet and dry ingredients, then fold in grated carrots and walnuts.
  5. Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let cool before serving.
