Smothered Chicken with Creamed Spinach, Bacon, Mushrooms

  • 1.5 pounds skinless boneless chicken breast (approximately 4 small or 2 large breasts, halved)
  • Salt to taste
  • ¼ teaspoon lemon pepper seasoning
  • ¼ teaspoon paprika
  • 1 tablespoon vegetable oil
  • 10 ounces fresh spinach
  • 4 cloves garlic minced
  • ⅔ cup half-and-half
  • ⅔ cup mozzarella cheese shredded
  • 4 ounces mushrooms sliced
  • 4 slices bacon cooked, chopped
  • 4 slices Pepper Jack cheese

Instructions

  1. Preheat oven to 375°F (190°C). In an oven-proof skillet, melt 1 tablespoon butter over medium heat. Season chicken breasts with salt, lemon pepper, and paprika. Sear chicken on both sides until golden (about 4-5 minutes per side), then transfer to oven and bake for 15-20 minutes until partially cooked.[1]
  2. In a separate skillet, heat 1 tablespoon vegetable oil. Sauté sliced mushrooms until golden and caramelized. In another skillet, wilt 10 ounces fresh spinach with 4 minced garlic cloves. Add ⅔ cup half-and-half and ⅔ cup shredded mozzarella; stir until creamy.[1]
  3. Cook 4 slices bacon until crispy, then chop. Remove chicken from oven. Top each breast with creamed spinach, chopped bacon, caramelized mushrooms, and a slice of Pepper Jack cheese. Return to oven and bake uncovered for 15-20 minutes until chicken is cooked through (internal temp 165°F). Broil 2-4 minutes to brown cheese if desired.[1]

For best flavor, caramelize mushrooms well for umami depth. Use fresh spinach for optimal texture; frozen may release excess water. Ensure chicken reaches 165°F internally to avoid undercooking.[1]
