  • 1 medium yellow onion (diced)
  • 2 medium carrots (peeled and chopped)
  • 2 celery stalks (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper (adjust to taste)
  • 8 cups low-sodium chicken broth (or vegetable broth for a lighter base)
  • Salt to taste (depending on the saltiness of your ham)
  • A dash of smoked paprika
  • 1 tablespoon apple cider vinegar or lemon juice (to brighten the final flavor)
