Smoked Bacon-Wrapped Pickle Crackers

Crispy crackers sandwiching tangy dill pickle slices, wrapped in smoky bacon and smoked to perfection for a savory, addictive appetizer.

  • 1 whole dill pickle
  • 24 Ritz crackers
  • 12 slices of bacon (cut in half)
  • BBQ seasoning (optional)

Instructions

  1. Preheat smoker to 225°F.
  2. Slice the dill pickle into ½-inch thick slices, about 8 slices per pickle.
  3. Sandwich each pickle slice between two Ritz crackers.
  4. Wrap each cracker-pickle sandwich with half a slice of bacon, placing the seam side down to secure the bacon.
  5. Place the wrapped crackers on a wire rack and sprinkle BBQ seasoning on top if desired.
  6. Smoke at 225°F for 30 minutes.
  7. Increase smoker temperature to 400°F and cook for an additional 5-8 minutes until bacon is crispy.
  8. Remove from smoker and let cool at room temperature for at least 5 minutes before serving.
