Slow Cooker German Potato Soup with Sausages

A hearty and comforting German-style potato soup made in a slow cooker, featuring tender potatoes, vegetables, and flavorful sausages.

  • 2 tablespoons olive oil
  • 6 medium potatoes, peeled and diced
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon caraway seeds (optional)
  • 6 cups vegetable broth
  • Salt, to taste
  • Black pepper, to taste
  • 1 tablespoon yellow mustard
  • 2 tablespoons fresh parsley, chopped
  • 4 sausages (such as bratwurst or smoked sausage)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat.
  2. Add potatoes, onions, carrots, and celery; cook for about 5 minutes until onions are translucent.
  3. Add garlic and caraway seeds (if using); cook for 1 more minute.
  4. Transfer the sautéed vegetables to the slow cooker and add vegetable broth.
  5. Cook on low for 6 to 8 hours until potatoes are tender.
  6. While the soup cooks, sear the sausages in a skillet over medium heat until golden brown; set aside.
  7. When the soup is done, stir in salt, pepper, yellow mustard, and parsley.
  8. Serve the soup hot with the sausages placed on top.

Notes

Sautéing the vegetables before adding them to the slow cooker enhances the flavor. Caraway seeds add a traditional German touch but can be omitted if preferred. Serve with crusty bread for a complete meal.
