Arugula and Apple Salad with Goat Cheese and Pecans

A simple and fresh salad combining peppery arugula, crisp apples, tangy goat cheese, and crunchy pecans, dressed with a bright lemon vinaigrette.

  • 4 cups arugula
  • 1 large apple, sliced and chopped
  • 1/2 cup pecans
  • 1/4 cup goat cheese, crumbled
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 3 tablespoons olive oil
  • 1 teaspoon honey
  • 1 teaspoon white wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a small bowl or mason jar, whisk together lemon juice, lemon zest, olive oil, honey, white wine vinegar, salt, and pepper to make the dressing.
  2. In a large bowl, combine arugula, chopped apple, pecans, and goat cheese.
  3. Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.
  4. Serve immediately to prevent the arugula from wilting.

Notes

Add the dressing just before serving to keep the arugula crisp. Double the dressing to use as a marinade or for other salads. Slice apples bite-size for easier eating and better presentation.
