Shepherd’s Pie Tater Tot Casserole

  • 1 onion, finely diced
  • 3 garlic cloves, minced
  • 1 pound ground beef
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup frozen peas, carrots, and corn mix
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 (32-ounce) bag frozen tater tots
  • 1 cup shredded cheddar cheese
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for about 3 minutes until softened.
  3. Add minced garlic and cook for 1 minute until fragrant.
  4. Add ground beef and cook, breaking up lumps, until no longer pink.
  5. Stir in tomato paste and flour; cook for 1 minute.
  6. Gradually add beef broth while stirring until well combined.
  7. Add frozen peas, carrots, and corn, Worcestershire sauce, and dried thyme. Cook, stirring occasionally, until vegetables are heated through.
  8. Season with salt and pepper to taste. Remove from heat.
  9. Transfer meat mixture to a 9×13 inch baking dish.
  10. Arrange tater tots in a single layer over the meat mixture.
  11. Sprinkle shredded cheddar cheese evenly over the tater tots.
  12. Bake for about 30 minutes or until tater tots are cooked through and golden.
  13. Garnish with fresh parsley if desired before serving.

Notes

This casserole is versatile and forgiving; you can substitute ground turkey or chicken for beef. For a twist, try sweet potato tater tots. It also freezes well—assemble and freeze before baking, then thaw and bake when ready.
