For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, sliced
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket into each chicken breast, being careful not to cut all the way through.
  3. In a bowl, mix roasted red peppers, spinach, mozzarella, garlic, oregano, basil, salt, and pepper.
  4. Stuff each chicken breast with the mixture and secure with toothpicks if needed.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  6. Transfer skillet to the oven and bake for 20-25 minutes or until chicken reaches 165°F (74°C) internally.
  7. Let rest for 5 minutes before serving.
