For the Crust:

  • 1 cup cooked chicken, shredded
  • 1 cup zucchini, grated
  • 1 cup cheddar cheese, shredded
  • 1 1/2 cups all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup olive oil
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or line with muffin cups.
  2. In a large bowl, mix together flour, baking powder, salt, pepper, and garlic powder.
  3. In another bowl, whisk eggs, milk, and olive oil. Add shredded chicken, zucchini, and cheese.
  4. Combine wet and dry ingredients until just mixed. Do not overmix.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes, or until golden brown and a toothpick inserted comes out clean.
  7. Let cool for 5 minutes before removing from the tin.
