Savory Chicken, Cheese & Zucchini Muffins

For the Crust:

  • 1 cup cooked chicken, shredded
  • 1 cup zucchini, grated and drained
  • 1 cup cheddar cheese, shredded
  • 1 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup vegetable oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a muffin tin or line with muffin cups.
  2. In a large bowl, mix flour, baking powder, salt, black pepper, and garlic powder.
  3. In another bowl, whisk eggs, milk, and vegetable oil. Add shredded chicken, zucchini, and cheese.
  4. Combine wet and dry ingredients, stirring until just mixed. Do not overmix.
  5. Spoon batter into muffin cups, filling each about 3/4 full.
  6. Bake for 20-25 minutes or until golden and a toothpick comes out clean.
  7. Let cool for 5 minutes before removing from the tin.
