For the Crust:
- 1 lb Italian sausage, casings removed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 2 (15 oz) cans white beans, drained and rinsed
- 1 (14.5 oz) can diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 cups fresh spinach, chopped
Instructions
1. Prepare the Crust:
- In a large pot, brown the sausage over medium heat, breaking it into small pieces as it cooks.
- Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
- Stir in the garlic and cook for another minute until fragrant.
- Pour in the chicken broth, white beans, diced tomatoes, thyme, and oregano. Bring to a boil.
- Reduce heat and simmer for 20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Serve hot and enjoy.
