Sausage White Bean Soup

A hearty and flavorful soup with sausage, white beans, and vegetables, perfect for a cozy meal.

For the Crust:

  • 1 lb Italian sausage, casings removed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 (14.5 oz) can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the sausage over medium heat, breaking it into small pieces as it cooks.
  2. Add the onion, carrots, and celery to the pot and cook until softened, about 5 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth, white beans, diced tomatoes, thyme, and oregano. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Stir in the fresh spinach and cook until wilted, about 2 minutes.
  8. Serve hot and enjoy.
