Hearty Sausage Soup

A comforting and flavorful sausage soup loaded with vegetables and beans, perfect for a cozy meal.

  • 1 pound Italian sausage, casings removed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 (14.5-ounce) can diced tomatoes
  • 4 cups chicken broth
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 cups fresh spinach, chopped
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sausage and cook until browned, breaking it up with a spoon.
  2. Add onion, garlic, carrots, and celery to the pot. Cook until vegetables are softened, about 5 minutes.
  3. Stir in diced tomatoes, chicken broth, cannellini beans, oregano, and basil. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes to allow flavors to meld.
  5. Add chopped spinach and cook for an additional 5 minutes until wilted.
  6. Season with salt and pepper to taste. Serve hot.

Notes

For a spicier soup, use hot Italian sausage or add red pepper flakes. This soup can be made ahead and reheated, which enhances the flavors.
