  • 2 tablespoons cooking oil

Instructions

  1. Fry the sausage patties until well done and fully cooked. If using pre-made sausages, ensure they are heated through.
  2. In a large mixing bowl, sift together flour, baking powder, salt, and sugar.
  3. In a separate bowl, whisk together milk, egg, and vanilla extract.
  4. Combine wet and dry ingredients, mixing until smooth and reaching desired consistency. Add more water if needed.
  5. Heat cooking oil in a pan, coating the bottom lightly.
  6. Take a fully cooked sausage and dip it into the pancake batter using a fork.
  7. Place the batter-coated sausage into the hot pan and cook until golden brown on all sides.
  8. Flip and continue cooking until the pancake coating is cooked through.
  9. Transfer to a plate and serve warm with syrup or desired toppings.

Notes

This recipe can also be made with bacon instead of sausage – fry the bacon until crispy, then dip and cook the same way. Ensure sausages are fully cooked before dipping to avoid undercooked centers. Vanilla extract in the batter adds a subtle sweetness that complements the savory sausage.
