  • 1/2 recipe Ginger and Baker pie dough or one roll refrigerated pie dough
  • 1/2 cup unsalted butter, melted and cooled
  • 1/3 cup sugar
  • 3/4 teaspoon kosher or sea salt
  • 1 tablespoon cornmeal
  • 2 teaspoons vanilla extract
  • 1 pinch nutmeg
  • 3/4 cup local honey
  • 3 large eggs
  • 1/2 cup heavy whipping cream
  • 1 tablespoon apple cider vinegar or white wine vinegar
  • 3 tablespoons bourbon (optional)
  • 12 teaspoons flaked salt (such as Maldon or fleur de sel) for topping

Instructions

  1. Prepare the pie dough and fit it into a 9-inch pie pan; chill until ready to use.
  2. Preheat the oven to 375°F (190°C).
  3. In a bowl, whisk together melted butter, sugar, salt, cornmeal, vanilla, and nutmeg.
  4. Add honey and mix well.
  5. Whisk in eggs one at a time until fully incorporated.
  6. Stir in heavy cream, vinegar, and bourbon (if using).
  7. Pour the filling into the prepared pie crust.
  8. Bake for 40-45 minutes until the filling is set and slightly browned on top.
  9. Remove from oven and let cool to room temperature.
  10. Refrigerate until fully chilled and firm.
  11. Before serving, sprinkle the top with flaked sea salt.

Notes

The whiskey adds a subtle warmth that balances the sweetness of the honey. For a citrusy twist, add a teaspoon of lemon zest. Use a flaky sea salt like Maldon for the best texture and flavor contrast on top.
