No Bake Ritz S’mores Cookies

A sweet and salty no-bake treat that combines the classic flavors of s’mores with buttery Ritz crackers, marshmallow creme, and chocolate almond bark. Perfect for summer gatherings or holiday cookie trays.

  • 48 Ritz Crackers
  • 7 ounces marshmallow creme (or marshmallow fluff)
  • 24 ounces chocolate almond bark (or Ghirardelli melting wafers)
  • 1 cup graham crackers, crushed (optional, for topping)
  • Marshmallow bits (optional, for topping)
  • Mini chocolate chips (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. Spread marshmallow creme onto half of the Ritz crackers, then top each with another cracker to make a sandwich.
  3. Melt the chocolate almond bark according to package instructions. Dip each sandwich cookie into the melted chocolate, coating completely. Place on the prepared baking sheet.
  4. While the chocolate is still wet, sprinkle with crushed graham crackers, marshmallow bits, or mini chocolate chips if desired.
  5. Allow the chocolate to set at room temperature or chill in the refrigerator until firm.

Notes

For best results, use real Ritz crackers as they are sturdier and less likely to break. You can customize the toppings with sprinkles or holiday colors for special occasions. Store in an airtight container at room temperature for up to 3 days.
