  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup shredded Swiss cheese
  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon caraway seeds
  • Salt and pepper to taste
  • Vegetable oil for frying
  • For the Spicy Thousand Island Dipping Sauce:
  • ½ cup mayonnaise
  • ¼ cup ketchup
  • 2 tablespoons sweet pickle relish
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon hot sauce (adjust to taste)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon garlic powder

Instructions

  1. In a large bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, and softened cream cheese. Mix well.
  2. Add the egg, flour, baking powder, caraway seeds, salt, and pepper to the mixture. Stir until all ingredients are evenly incorporated and a dough-like consistency forms.
  3. Shape the mixture into 1-inch balls and set aside.
  4. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
  5. Fry the Reuben Balls in batches until golden brown and crispy, about 3-4 minutes per batch. Remove and drain on paper towels.
  6. For the Spicy Thousand Island Dipping Sauce, whisk together mayonnaise, ketchup, pickle relish, red onion, hot sauce, Worcestershire sauce, and garlic powder in a small bowl until smooth.
  7. Serve the hot Reuben Balls with the spicy Thousand Island dipping sauce.

Ensure the Reuben Balls are evenly coated and fried to achieve a crispy texture. Adjust the hot sauce in the dipping sauce to suit your preferred spice level. For a healthier option, bake the balls at 375°F (190°C) for 20-25 minutes instead of frying.
