Refreshing Corn Salad
- 4 large ears of fresh corn, shucked (approximately 4 cups or 20 oz of kernels)
- 1 generous cup of halved cherry tomatoes
- 1 cup chopped english cucumber
- 1/3 cup chopped red onion
- 2/3 cup crumbled feta cheese
- 3 tablespoons freshly chopped parsley
- 2 tablespoons freshly chopped basil
- 1/4 cup olive oil
- 1 1/2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1 1/2 teaspoons honey
- 1/2 teaspoon minced garlic
- 1/2 teaspoon each of salt and freshly ground black pepper
