  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 tablespoon red food coloring, optional
  • 1 ¼ cups buttermilk
  • 1 tablespoon white or apple cider vinegar
  • For Cream Cheese Frosting: 16 oz cream cheese, softened; 1 cup unsalted butter, softened; 4-5 cups confectioners' sugar; 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F. Grease and flour three 6-inch round cake pans and one 9×5 loaf pan. Sift together flour, baking soda, salt, and cocoa powder; set aside.
  2. In a mixer, cream butter and sugar until light and fluffy. Add oil, then eggs one at a time, vanilla, and red food coloring. Alternate adding dry ingredients with buttermilk and vinegar, mixing until combined.
  3. Divide batter among pans and bake 23-28 minutes or until toothpick comes out clean. Cool 10-15 minutes in pans, then on wire rack.
  4. Trim cooled 6-inch cakes into decreasing sizes to form tree layers (e.g., 6-inch, 5-inch, 4-inch). Stack with frosting between layers on a board to form tree shape. Crumble loaf cake for base or trunk.
  5. Prepare cream cheese frosting: beat cream cheese and butter, add sugar and vanilla until smooth. Frost entire cake, chill to set. Decorate with green tinting if desired, red sprinkles, and snowflake wafers.

Notes

Use room temperature ingredients for best texture. Shape the tree precisely before frosting for stability. Add green food coloring to frosting for a more festive tree look. Store covered in fridge up to 3 days.
