Ravioli with Tomatoes and Asparagus

A light and fresh pasta dish featuring cheese ravioli, cherry tomatoes, and asparagus in a garlic butter sauce.

For the Crust:

  • 1 package (9 oz) cheese ravioli
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 3 tbsp butter
  • 1 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Cook ravioli according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Add asparagus and sauté for 3-4 minutes until tender-crisp.
  3. Add cherry tomatoes, garlic, red pepper flakes, salt, and black pepper. Cook for another 2 minutes.
  4. Stir in remaining butter until melted. Add cooked ravioli and toss gently to coat.
  5. Sprinkle with Parmesan cheese and garnish with fresh basil before serving.

Notes

You can customize the seasonings to taste.
