Raspberry No Gelatin Dessert

A refreshing raspberry dessert that sets without gelatin, using natural ingredients for a light and fruity treat.

  • 2 cups fresh or frozen raspberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 cup cold water
  • 1/2 teaspoon vanilla extract

Instructions

  1. In a small bowl, mix cornstarch with cold water until smooth.
  2. In a saucepan, combine raspberries, sugar, and lemon juice; cook over medium heat until raspberries start to release juice and sugar dissolves.
  3. Add the cornstarch mixture to the raspberry mixture; stir constantly until the mixture thickens.
  4. Remove from heat; stir in vanilla extract.
  5. Pour into serving dishes and refrigerate for at least 2 hours until set.

Notes

Use fresh raspberries if possible for best flavor. Adjust sugar to taste depending on the sweetness of the berries. This dessert can also be made with other berries or fruits.
