For the Crust:
- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup raspberry jam
- 1/2 cup dark chocolate chips
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a bowl, whisk together flour, cocoa powder, sugars, baking powder, and salt.
- In another bowl, mix melted butter, eggs, vanilla, and milk until smooth.
- Combine wet and dry ingredients, stirring until just incorporated.
- Fill cupcake liners halfway with batter, then add 1 tsp raspberry jam and a few chocolate chips in the center.
- Cover with more batter until liners are 3/4 full.
- Bake for 18-20 minutes or until tops are set but centers are still slightly soft.
- Let cool for 5 minutes before serving.
