Pumpkin Streusel Muffins

These pumpkin streusel muffins are soft, moist, and full of warm fall spices. Topped with a crunchy cinnamon streusel and sweet glaze, they’re the perfect breakfast or snack!

  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ½ cup unsalted butter, melted
  • ¾ cup brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
  • ⅓ cup milk
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ¼ cup brown sugar
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ cup unsalted butter, melted
  • ½ cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, nutmeg, and cloves.
  3. In a large bowl, whisk together melted butter and brown sugar. Add eggs one at a time, whisking well after each addition. Mix in pumpkin puree, milk, and vanilla.
  4. Gradually fold dry ingredients into wet ingredients until just combined. Do not overmix.
  5. For the streusel: In a small bowl, mix together flour, brown sugar, granulated sugar, and cinnamon. Pour in melted butter and stir until crumbly.
  6. Divide batter evenly among muffin cups, filling about ¾ full. Sprinkle streusel topping over each muffin.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  8. For the glaze: Whisk together powdered sugar and milk until smooth. Drizzle over cooled muffins.

Notes

Store muffins in an airtight container at room temperature for up to 3 days. For longer storage, freeze without glaze for up to 3 months. Thaw at room temperature and add glaze before serving. You can substitute pumpkin pie spice for the individual spices if preferred.
