Pumpkin Protein Balls

These no-bake pumpkin protein balls are the perfect healthy snack for fall! They are packed with protein, healthy fats, and fiber, and are naturally sweetened.

Ingredients

  • 1 cup old fashioned oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup pumpkin puree
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp pumpkin pie spice
  • 1/2 tsp cinnamon
  • 1/4 cup mini chocolate chips

Instructions

  1. Mix all ingredients together in a large bowl until well combined.
  2. Use a small cookie scoop to form into balls. If the mixture is too sticky, wet your hands slightly to help form the balls.
  3. Place balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.

Notes

Store protein balls in an airtight container in the refrigerator for up to a week. For a firmer texture, you can freeze them. The mixture can be sticky; wetting your hands makes rolling much easier.
