For the Crust:

  • 4 large potatoes, diced
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add potatoes and cook for 10 minutes, stirring occasionally.
  2. Add onion, bell pepper, and garlic. Cook for another 10 minutes until vegetables are tender and potatoes are golden.
  3. Stir in paprika, thyme, salt, and pepper. Top with shredded cheese, cover, and cook for 2-3 minutes until cheese melts.
  4. Garnish with fresh parsley and serve hot.
