Poor Man’s Husband Casserole

A hearty, budget-friendly casserole layered with creamy noodles, a rich meat sauce, and plenty of melty cheese.

  • 8 oz egg noodles
  • 1 lb ground beef
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • ½ cup sour cream
  • 2 oz cream cheese, softened
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup crushed buttery crackers (like Ritz)
  • 2 tbsp melted butter

Instructions

  1. Preheat the oven to 350°F (180°C).
  2. Cook the egg noodles al dente and set aside.
  3. In a large skillet, cook the ground beef until browned, breaking it into small pieces.
  4. Add the diced onion and minced garlic to the skillet and cook until the onion is translucent.
  5. Stir in the tomato sauce, sour cream, cream cheese, and Italian seasoning. Season with salt and pepper to taste.
  6. In a large mixing bowl, combine the cooked noodles and the meat sauce mixture.
  7. Transfer the noodle mixture to a 9×13 inch baking dish.
  8. Top the casserole with shredded cheddar and mozzarella cheese.
  9. Mix the crushed crackers with melted butter and sprinkle over the cheese.
  10. Bake for about 30-40 minutes or until the top is golden brown and the cheese is melted.
