Pineapple Upside-Down Cake Bars

A delightful twist on the classic pineapple upside-down cake, transformed into easy-to-serve bars with caramelized pineapple and cherries.

For the Crust:

  • 1/2 cup unsalted butter, melted
  • 1 cup packed brown sugar
  • 1 can (20 oz) pineapple slices, drained and juice reserved
  • Maraschino cherries, halved
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup reserved pineapple juice
  • 1/2 cup sour cream
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a bowl, mix melted butter and brown sugar. Spread evenly in the prepared pan.
  3. Arrange pineapple slices over the butter mixture and place cherry halves in the center of each slice.
  4. In another bowl, whisk flour, baking powder, and salt. In a separate bowl, beat granulated sugar, eggs, vanilla, sour cream, and pineapple juice until smooth.
  5. Gradually add dry ingredients to wet ingredients, mixing until just combined. Pour batter over pineapple layer.
  6. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool for 10 minutes, then invert onto a serving tray. Serve warm or at room temperature.
