Pineapple Cream Cheesecake

A creamy and tropical cheesecake with a delightful pineapple twist.

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 cup crushed pineapple, drained
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 tsp pineapple extract (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Mix graham cracker crumbs and melted butter, then press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and crushed pineapple.
  3. Pour the filling over the crust and bake for 45-50 minutes or until the center is set. Let cool completely.
  4. In a separate bowl, whip the heavy cream with powdered sugar and pineapple extract until stiff peaks form. Spread over the cooled cheesecake.
  5. Refrigerate for at least 4 hours or overnight before serving.

You can customize the seasonings to taste.
