Pineapple Coconut Dream Cake

A tropical-inspired cake bursting with pineapple flavor and coconut sweetness, perfect for summer gatherings.

For the Crust:

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1 cup crushed pineapple (with juice)
  • 1/2 cup shredded coconut
  • 1/2 cup coconut milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. Add pineapple with juice, coconut milk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Fold in shredded coconut. Pour batter into prepared pan.
  5. Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool completely before serving.
