For the Crust:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1 cup crushed pineapple (with juice)
- 1/2 cup shredded coconut
- 1/2 cup coconut milk
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- Add pineapple with juice, coconut milk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
- Fold in shredded coconut. Pour batter into prepared pan.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Cool completely before serving.
