Pineapple Coconut Dream Cake

  • 1/2 cup shredded coconut
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup coconut milk
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and baking soda.
  3. Add eggs, coconut milk, vegetable oil, and vanilla extract. Mix until smooth.
  4. Fold in shredded coconut and crushed pineapple.
  5. Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
  6. Let the cake cool before serving.
