For the Crust:
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, and baking soda.
- Add eggs, coconut milk, vegetable oil, and vanilla extract. Mix until smooth.
- Fold in shredded coconut and crushed pineapple.
- Pour batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
- Let the cake cool before serving.
