For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 3 eggs
- 1 cup crushed pineapple, drained
- 1/2 cup coconut milk
- 1 tsp vanilla extract
- 1/2 cup shredded coconut
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F (165°C).
- Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese and sugar until smooth. Add eggs one at a time, mixing well after each.
- Stir in pineapple, coconut milk, vanilla, and shredded coconut until combined.
- Pour mixture over crust and bake for 50-55 minutes until center is almost set.
- Cool completely before refrigerating for at least 4 hours.
