Piña Colada Fluff

A light and creamy no-bake dessert that captures the tropical flavors of a piña colada with crushed pineapple, coconut, marshmallows, and whipped topping.

  • 1 (20 ounce) can crushed pineapple, undrained
  • 1 (3.4 ounce) package instant coconut cream pudding mix
  • 1 (8 ounce) container Cool Whip, thawed
  • 1 cup sweetened shredded coconut
  • 1 cup pineapple tidbits, drained
  • 1 cup miniature marshmallows
  • 1/2 cup maraschino cherries, drained and halved

Instructions

  1. In a large bowl, stir together the crushed pineapple (with juice) and the coconut cream pudding mix until well combined.
  2. Fold in the Cool Whip until smooth and creamy.
  3. Gently stir in the shredded coconut, drained pineapple tidbits, miniature marshmallows, and halved maraschino cherries.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

For a more authentic piña colada flavor, you can add 1 teaspoon of coconut extract or rum extract. If using cherries, pat them dry with a paper towel to prevent streaks in the salad. This dessert is best served chilled and can be made ahead for parties.
