For the Crust:
- 1 lb ground chicken
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 large egg
- 1/4 cup chopped fresh parsley
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried oregano
- 1/4 cup milk
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, garlic, egg, parsley, salt, pepper, oregano, and milk. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each into a small loaf.
- Heat olive oil in a large skillet over medium heat. Sear the meatloaves for 2-3 minutes per side until golden brown.
- Transfer the seared meatloaves to the prepared baking sheet and bake for 20-25 minutes, or until cooked through.
- Let the meatloaves rest for 5 minutes before serving.
- Garnish with extra Parmesan and parsley if desired.
