For the Crust:

  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 large egg
  • 1/4 cup chopped fresh parsley
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/4 cup milk
  • 2 tbsp olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, Parmesan cheese, breadcrumbs, garlic, egg, parsley, salt, pepper, oregano, and milk. Mix until well combined.
  3. Divide the mixture into 4 equal portions and shape each into a small loaf.
  4. Heat olive oil in a large skillet over medium heat. Sear the meatloaves for 2-3 minutes per side until golden brown.
  5. Transfer the seared meatloaves to the prepared baking sheet and bake for 20-25 minutes, or until cooked through.
  6. Let the meatloaves rest for 5 minutes before serving.
  7. Garnish with extra Parmesan and parsley if desired.
